In honor of St. Patrick’s Day, here are some delicious, traditional Irish dishes that would be perfect to bring to any celebrations or use as leprechaun bait. Even if you forgot to wear green, save the day by whipping up these quick and easy recipes!
Irish Tea Cake
The perfect side to serve with tea or coffee, Irish tea cake is fluffy and simple. An easy recipe for beginners to try, and a popular Irish dessert.
Ingredients:
1/2 cup butter, softened
1 cup white sugar
2 eggs
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
Powdered sugar for dusting
Fresh berries and whipped cream, for topping (optional)
Preheat oven to 350 degrees. Grease and flour a 9-inch round pan or cake tin. In a medium bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, mixing until fully incorporated. Stir in the vanilla. In a separate bowl, combine the flour, baking powder and salt. Stir into the batter alternately with the milk, starting and ending with the flour mixture. Spread the batter evenly into the prepared pan. Bake for 30 to 35 minutes or until light golden brown. Cool for about 15 minutes, then dust with powdered sugar. If desired, top slices with fresh berries and/or whipped cream. Enjoy!
Boxty
Similar to latkes, these traditional Irish potato pancakes set themselves apart by combining both grated and mashed potatoes. They are crispy, buttery, and super effortless to make.
Ingredients:1 ½ cups grated raw potatoes
1 cup all-purpose flour
1 cup cold mashed potatoes
1 large egg
1 tablespoon milk
salt, pepper, and garlic powder to taste
¼ cup olive oil
Toss grated potatoes with flour in a large bowl. Stir in mashed potatoes until combined.Whisk egg and milk together in a separate bowl; mix into the potatoes. Season to taste with salt, pepper, garlic powder, and any other preferred spices. Heat oil in a large skillet over medium-high heat. Drop in potato mixture, forming patties about 2 inches in diameter. Fry on both sides until golden brown, 3 to 4 minutes per side. Serve with butter and enjoy!
